i have never had duff's wings before but i hear a lot of people talking about them....but i have a question....they say their wings are crispy.....but how can that be when they "steam" the sauce into them ?

i am an extra extra crispy guy....seems to me that they wouldn't be crispy enough

That was Anchor that steamed them, but the lady said they were crispy anyways. I'll assume it's because they use roaster wings(the biggest ones). By the time they are actually done cooking(15 minutes) the skin is already extra crispy.

I got a tip for amateur wing cookers. The toss method(that Duff's uses) is the best way to get them extra crispy. When they're done, put them in the bowl with the melted butter, and toss them. THEN add the hot sauce, and toss again. This will make them ultra crispy(12-13 minutes for jumbo @ 360). Eat right away. If you get them to go, they will be soggy no matter what you do. Oh ya, use jumbo wings(not roaster). They do get rubbery. Duffs was a slam dunk to win from the get go. Anchor lives off reputation apparently.
